I bet you thought this was bacon at first glance, am I right? If you steer clear from pork (or meat in general) or perhaps just wanting to eat a little healthier (nothing like strips of fatty fried bacon to jump start your day!😑) then try my version of CARROT BACON! Yea, that's right. Bacon made from carrots!🐰 This stuff is like candy...and it tastes pretty close to the real thing! . Ingredients: 2 large/long carrots 2 tsp low sodium miso paste (chickpea miso is also available for those avoiding soy) 2 Tbsp black strap molasses 1 tsp apple cider vinegar Sea salt to taste . ✏️Pre-heat oven to 400 degrees F. ✏️Slice carrots in mandolin on thinnest setting. ✏️In a small sauce pan, mix miso paste, molasses, and apple cider vinegar over low heat until it starts to liquefy and all ingredients blend well together. Remove from heat. ✏️Line a baking sheet with parchment paper. ✏️Submerge sliced carrots in sauce and line each one on baking sheet (not touching each other) ✏️Season with sea salt and bake for 5 minutes, flip, brush with a little more sauce (and salt if needed) then bake for another 5-6 minutes or until you see the sauce begin to bubble and caramelize. *Baking time will vary depending on thickness of carrots and *sauce used. . *You can also just use whatever sauce you want (ie: teriyaki, BBQ, sweet & sour, honey mustard, etc.) #Don'tKnockItTilYouTryIt .
